The integral requirements to the modern technologies are achievement energy efficiency, ecological standards and high quality of products. The solution of this problem can be obtained by using thermalphysic process for controlling quality parameters of product. This require carrying out profound investigation and analyzing of laws of the influence this process on the treatment medium. The complex of investigations of physical process effects on micron and submicron on biological systems had been carried out in the Institute of Thermalphysic. There were three areas of investigation: 1) investigation of the influence adiabatic boiling and hydrodynamic cavitation on milk subsystems; 2) investigation of hydrodynamic, thermal and rheological process, which have place in extruder channel in the time of treatment of vegetable raw material for creation of the technologies of production of mixtures for different purpose; 3) mathematical simulation hydro- and aerodynamical process in the pulse dispersant track. In the frame of the first area of investigation were estimated parameters of cavitation in equipment for milk processing by mathematical simulation, detected mechanism of milk proteins heat stability increasing and mechanism of the inhibition of bacterial cells in milk. In the term of investigation of dispersion and heat-mass transfer process in the chambers of the apparatus was decreased energy consumption on 30%, developed changes №5 to technological normative document ТУ У 15.5-05417118.023 – 2002 «Молоко коров’яче питне», implement to the industry new apparatus ВГ-15 for thermal vacuum treatment of milk. In the frame of the second area of investigation were carried out the complex of investigation of the extrusion kinetics, the parameters influence on quality characteristic of product were determined, versatile mathematical model and computer program for controlling of thermal treatment of raw materials and setting finished product characteristic was developed. In the terms of work two technological scheme, which implement new way of extrusion heat utilization, allows to decrease energy consumption and obtain high quality mixtures for different purpose , were developed. In the frame of the third area of investigation were carried out mathematical simulation aerodynamical process in the tract of pulse dispergator, on this base the computer program “ІМРАСТ” was developed. This program can be used for modernization construction of the pulse type apparatus and for development of new constructions.
